Pisco is Peru’s national drink. It is named after the province of Pisco, located in the region of Ica. This liquor is the main ingredient of the Pisco sour, an emblematic Peruvian beverage. The drink is thought to have been created by Spanish immigrants as an alternative to pomace brandy, a Spanish import.
The region of Pisco is ideal for grape cultivation, and winemaking was (and still is) a large business, with shipments passing through the Peruvian port town of Pisco, located on the same-named river. This liquor was also claimed to be used primarily to strengthen wine and prevent oxidation until the 1800s. A delightful little beverage like this could only be neglected for so long, and by 1764, Pisco output in the region eclipsed that of wine, accounting for 90% of grape drinks.
Traditionalist standards and restrictions control the production of Pisco. It can only be prepared with eight different types of grapes (four aromatic and four non-aromatic). Also, it can only be created in specified areas. Pisco is rested in clay jars for three months after distillation to let the flavors mingle. Nothing, not even water, is added.
There are three types: ‘Pisco Puro,’ which is created from a single grape variety, ‘Pisco Extra,’ which is manufactured from two grape varieties, and ”Pisco Acholado,’ which is prepared from a variety of grapes and has the potential for a wide range of subtleties.
Finally, there’s ‘Pisco Mosto Verde,’ or ‘green must,’ which is prepared from grapes that have only been partially fermented before distillation, making it sweeter and more expensive because it requires more grapes to produce.

8:00 am
We will pick you up from your hotel in Ica at 10:30 am. Then, we will visit the Ica’s Plaza de Armas and the Señor de Luren church. After that, we will go to a local wine cellar, where we will learn about the wine making process. We will also taste some wine and Pisco liquor samples.
Around 13:00 pm, we will stop at a local restaurant to have lunch. The lunch is not included in the tour price. After lunch, we will visit Cachiche town, where we will explore the 7-head palm, a local tourist center, and the witch’s park.
Afterwards, we will explore the Huacachina Lagoon, the only oasis in South America. We will stop there to take pictures and buy some souvenirs.Then, we will enjoy a short buggie tour on the nearby sand dunes, followed by some sandboarding. Finally, we will transfer you to a nearby hotel.
We will pick you up from your hotel at 9:00 am. Then, we will drive to the “El Catador” wine cellar. You will learn about the Pisco liquor making process. Also, you will taste some Pisco and wine samples. Afterwards, we will visit the “Museo Lazo” wine cellar, where we will taste more Pisco and wine.
Around noon, we will stop at a local restaurant to have lunch. The lunch is not included in the tour price. Then, we will visit the “Tacama” wine cellar, which is a renowned producer of alcoholic beverages in Peru.
